I have spoken to two Yamaha dealerships about fitting a acrapovic decat pipe , I have a acrapovic slip on end can all ready , they both have demonstrators with this set up and the both have told me I don't need to remap it as it will be fine , can anyone tell me if this is correct. regards Dave

You can run it without a map and it will run ok but will lumpy in places and hunt on idle etc
But if you want the best possible gains then you are best getting it set up on a dyno. Either by installing a Power Commander/Bazzaz fuel module or flash tuning the ECU directly though something called Woolich software.

Mine with the LeoVince de-cat and can was running lean in the mid range, not dangerously so but not ideal.
Most dynos will do a power run with the O2 probe in the exhaust for not much money, that would tell you for certain and give you some numbers to show what your particular bike is making. One thing that is a given is that even with the full factory exhaust a remap will make it run more smoothly with better throttle response and a few extra pony's. I had the Woolich tune on mine with the QS/Blipper and loved it, I still think that power commander's are a waste of money if your bike can be mapped to the ECU (pay for the unit then pay for it to be mapped), the bike can be flashed back to standard if you de-modify it when you sell it on.

MT-10s run pretty lean out the factory, it's only going to be leaner with a decat - okay it's not going to blow apart but I suspect the further increased exhaust gas temperature will shorten exhaust valve life. If you keep the lambda sensors, the mixture at low revs/small throttle openings will be corrected by the ECU, but when caning it or cruising at high speeds you are effectively running off a static fuel map which is where it'll start to go too lean.
